We have just created new sites in order to split up the content we have sitting on one domain. As a result we are migrating the content from the current location and will place them on the new sites. I would like to know whether it is possible to redirect these URLs to the new domains and how I would be able to do this?

yes is possible. The destination URL can be on a different domain. Also since ReDJ 1.5 you can build dynamic destinations, so you could (as example) redirect all URL from a category on the source old site, to new domain. There a good tutorial about ReDJ available in download section with a lot of example.
